3/4 cup all purpose flour
1 cup 2 tbsp whole wheat flour
1/4 cup ground almonds
1/2 cup confectioners sugar
1 small pinch of salt
1 1/2 sticks cold unsalted butter
3 tablespoons poppyseed
Zest of one medium orange
1 large egg yolk
2 tablespoons ice water
1/4 tsp rum
1/4 tsp vainilla
Jam
Mix the dry ingredients in a large bowl
Add the butter and mix until incorporated
In a small bowl whisk the egg yolk, rum, vainilla and water
add to the flour mixture and knead until it forms a dough
Wrap dough in waxed paper and refrigerate for 30 minutes
Pre heat the oven to 325°F
Knead the dough for a few seconds and form small balls making a hole in the middle of each one
Fill with Jam
Arrange them on a greased baking sheet
Bake for 15 to 20 minutes
